Straight from the workshop

These come out of the same family workshop in northern Vietnam as the ovals, coiled by hand from natural rattan. I buy them direct, and they get packed in my garage in Kardinya. Nobody sits in the middle of that, which is why a round basket with the liner in the price still lands under twenty dollars.

Natural materials, nothing extra

The rattan is untreated — no varnish, no glue on the proofing surface. The liner is linen, not plastic, and machine washable on cold. Both last for years with basic care. No single-use parts.

Round or oval?

Round gives you a boule, the classic dome loaf that slices into wide round pieces. Oval gives you a batard, the long loaf that fits a sandwich. If you are buying your first basket and you have no strong feeling either way, most people start round because a boule is more forgiving of a slightly slack dough. If you already bake and you want long loaves, go for the medium oval or the large oval.

How I use mine

Rice flour on the liner, dough seam side up, then straight into the fridge overnight. The rattan pulls moisture off the surface so the skin firms up and the score opens instead of dragging. Bake it without the liner if you want the spiral rings on the crust. Use the liner if you want a smooth loaf and less flour on the bench.

Questions I get asked

Do I need to season it first?
No. Rice flour before the first bake and it is ready.

How do I clean it?
Never wash the rattan. Knock the flour out, leave it somewhere with air moving until bone dry, then store it. The liner goes in the machine on cold.

Why rice flour and not plain flour?
Rice flour does not absorb water, so it stays powdery instead of gluing itself to the dough.

What size loaf does it hold?
Around 500g of dough, which is a standard home boule off a 1kg flour bag split in two.
